Join the ICE bar team for an evening of cocktails, creativity and hands-on mixology, designed to take you beyond simply following a cocktail recipe.

Your experience begins with a welcome drink before heading to the ICE Cook School where you’ll discover the techniques, ingredients and flavour combinations that go into making great cocktails.

Throughout the class, our bartenders will guide you through professional mixing techniques as you make and enjoy a minimum of three different drinks. You’ll learn how to create a perfectly balanced stirred cocktail, master the technique behind a shaken cocktail, and finish with a layered shot.

But this experience goes further than the cocktails themselves.

You’ll create your own flavoured simple syrup, exploring how different ingredients can be used to bring sweetness and flavour to a drink. You’ll also prepare your own alcohol infusion, learning how infusions can transform spirits and open up completely new cocktail possibilities.

Best of all, your handmade syrup and alcohol infusion are yours to take home, so you can continue experimenting with your new skills after the class.

There’ll be plenty to enjoy along the way too, with buffet-style nibbles served throughout the evening, giving you time to relax, chat and enjoy each cocktail as you make it.

Whether you’re completely new to cocktail making or already know your Martini from your Margarita, this is a relaxed, sociable evening with plenty of opportunity to ask questions, discover new flavours and learn techniques you can recreate at home.
